I think you have a lot of time to see many places. Airport hotel is inside airport, take shuttle there, wash up, breakfast, sleep, take shuttle back to airport(15 minutes), take subway or taxi into city(45 minutes). There are very few bicycles in Guangzhou, motorcycle is not allowed. Roads are wide with cars and buses, too dangerous for bicycles, narrow streets in old part of city always have many people, your bicycle would be too dangerous for them.

Take subway(with transfer) to Haizhu square, Pearl River is just a block away. River cruise dock is one block west along the river. You can get off at Canton Tower to see view thru smog, or the other way west to Shamian Island, walk thru this old colonial island, from there you can walk to Shangxiaju pedestrian shopping street, 10-15 minutes thru dry seafood market, tea market, Chinese medicine market, when you reach a small one block long pet and Bonzai market, you are there. 100s of shops and restaurants and food stalls, movie houses, shoe repair, cake stall, ice shops, whatever.

Wherever you will be, grab a taxi at 4PM, go back to airport(45-60 minutes), you'll need to check out airport hotel, that takes 45-60 minutes with shuttles etc.. Should check in approx. 60-75 minutes before flight time. 345PM maybe better, as taxis change shift starting at 4PM, many of them do not take passenger.
